- 2–3 medium yellow squash (thickly sliced, then cut into quarters)
- 12 oz white button mushrooms (washed & quartered)
- Salt & pepper (to taste)
- 3 tbsp minced garlic
- 1/3 cup olive oil (+ 2 tbsp)
- 1/4–1/3 cup soy sauce
- 1 1/2 tbsp rice apple vinegar
- 1 tbsp sesame oil
- 1 tsp garlic powder
Instructions
- Prepare the ingredients by mixing chicken chunks, sliced zucchini, yellow squash quarters, and quartered mushrooms in a large bowl.
- Drizzle with olive oil and season with garlic, soy sauce, salt, and pepper. Mix well.
- Transfer the mixture to the air fryer basket and spread evenly. Cook at 375°F for 15 minutes, checking halfway through.
