Ingredients
- 1/2 C butter (softened to room temperature)
- 1/2 C packed brown sugar
- 1/4 tsp. baking soda
- 1 1/4 C rolled oats
- 3/4 C flour
- 1 C apricot preserves
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 or 9×9 baking dish with non-stick cooking spray.
- In a mixing bowl, combine softened butter, brown sugar, baking soda, rolled oats, and flour using a fork or pastry cutter until well mixed.
- Measure out 2 cups of the oat mixture and press it into the bottom of the prepared baking dish to create an even crust.
