  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 200g block of feta cheese
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes, then par-boil them in salted water for 6-8 minutes. Drain and let steam dry.
  3. In a baking dish, combine the par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and chilli flakes.
  4. Roast in the oven for about 30-40 minutes until golden brown.
  5. Add the feta cheese to the center along with lemon juice from one quartered piece and return to roast for an additional 15 minutes.
  6. Squeeze out the soft garlic from its skins into a bowl and mash it gently; mix with remaining lemon juice before folding into the potatoes.
  7. Drizzle honey on top and garnish with fresh basil before serving warm.
