Ingredients
- 2 large baking potatoes
- 200g block of feta cheese
- 2 tbsp olive oil
- 1 head of garlic
- 1 lemon, quartered
- Fresh basil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
- 1 tbsp honey
Instructions
- Preheat oven to 200°C (390°F).
- Wash and cube the potatoes; par-boil for 6-8 minutes.
- Drain and mix with olive oil, thyme, oregano, salt, pepper in a baking dish.
- Roast for 30-40 minutes until golden brown.
- Add feta in the center, squeeze half a lemon over it.
- Roast for an additional 15 minutes.
- Squeeze out garlic cloves and mix with potatoes; combine with remaining lemon juice and fresh basil.
- Drizzle honey before serving.
