  • 25g milk powder
  • 135g unsalted butter
  • 350g milk
  • 100g uncooked tapioca pearls
  • 2 eggs
  • 100g granulated sugar
  • 30g cornstarch
  • 1 tsp vanilla extract

Instructions

  1. For the crust, mix together flour, milk powder, salt, and sugar in a bowl. Cut in softened butter until crumbly. Add egg and vanilla; mix until smooth. Wrap in plastic and chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Soak tapioca pearls for 30 minutes; drain.
  3. Cook soaked tapioca pearls with milk over medium heat until translucent (about 15 minutes). Remove from heat.
  4. In another bowl, whisk eggs, sugar, cornstarch, and vanilla until smooth. Gradually add hot tapioca mixture while whisking.
  5. Return to saucepan and cook on low heat until thickened; remove from heat.
  6. Roll out chilled dough into a greased baking dish and pour custard over it. Brush edges with beaten egg.
  7. Bake for 45-55 minutes or until set and golden brown.
