  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg (room temperature)
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons honey

Instructions

  1. Prepare the sauce by mixing mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl until smooth. Set aside.
  2. Marinate chicken tenderloins in buttermilk for at least 10 minutes.
  3. Set up a breading station with three shallow dishes: one for the flour mixture (flour, cornstarch, garlic powder, salt, pepper), one for the egg and Sriracha mixture, and the last one for panko breadcrumbs.
  4. Coat each chicken piece first in the flour mixture, then the egg mixture, and finally in panko breadcrumbs.
  5. Heat canola oil in a frying pan over medium-high heat and fry the breaded chicken until golden brown on both sides (about 6 minutes). Drain on paper towels.
  6. Serve warm with the bang bang sauce drizzled over or on the side.
