- 1 ½ pounds boneless skinless chicken tenderloins
- 1 cup buttermilk
- ¾ cup all-purpose flour
- ½ cup cornstarch
- 1 large egg (room temperature)
- 2 cups panko breadcrumbs
- 1 cup mayonnaise
- ½ cup Thai sweet chili sauce
- 1 teaspoon Sriracha
- 2 tablespoons honey
Instructions
- Prepare the sauce by mixing mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl until smooth. Set aside.
- Marinate chicken tenderloins in buttermilk for at least 10 minutes.
- Set up a breading station with three shallow dishes: one for the flour mixture (flour, cornstarch, garlic powder, salt, pepper), one for the egg and Sriracha mixture, and the last one for panko breadcrumbs.
- Coat each chicken piece first in the flour mixture, then the egg mixture, and finally in panko breadcrumbs.
- Heat canola oil in a frying pan over medium-high heat and fry the breaded chicken until golden brown on both sides (about 6 minutes). Drain on paper towels.
- Serve warm with the bang bang sauce drizzled over or on the side.
