Ingredients

  • Fresh Lo Mein noodles (or cooked egg noodles)
  • Beef sirloin (or tender meat cut)
  • Mushrooms
  • Spring onions
  • Bell pepper
  • Cabbage leaves
  • Snow peas
  • Carrot
  • Vegetable oil
  • Light soy sauce
  • Sesame oil
  • Dark soy sauce
  • Oyster sauce
  • Sugar
  • Apple vinegar (or rice vinegar)
  • White pepper

Instructions

  1. Blanch the noodles in hot water for 1–2 minutes, drizzle with sesame oil, mix well, and set aside.
  2. In a bowl, combine all sauce ingredients and set aside.
  3. Slice vegetables and beef into thin pieces; marinate beef in a tablespoon of sauce for 10–15 minutes.
  4. Heat vegetable oil in a wok over medium-high heat. Stir-fry marinated beef until cooked through, about 2–3 minutes.
  5. Add vegetables to the wok, stir-frying for another 1–2 minutes.
  6. Push veggies aside; add blanched noodles and reserved sauce on top.
  7. Toss everything together until evenly combined and heated through, about 2–3 minutes.
  8. Serve hot, garnished with extra spring onions or chili oil if desired.
