  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter (you can use non-dairy butter, if preferred)
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Peel and thinly slice the yellow onions.
  2. In a skillet over medium heat, add olive oil and caramelize onions for 40-50 minutes, stirring occasionally.
  3. Wash and chop Yukon Gold potatoes, then boil them in salted water until fork-tender (about 20 minutes).
  4. Drain potatoes and mash until smooth.
  5. Mix in butter, half & half (or coconut milk), kosher salt, and combine well.
  6. Add half of the caramelized onions and Parmesan cheese to the potatoes; stir until evenly mixed.
  7. Serve topped with remaining caramelized onions, chopped chives, thyme, sage, and melted butter.
