  • 85 ml buttermilk
  • 165 g self-raising flour
  • 1 ½ tbsp cocoa powder
  • 1 tsp red food coloring
  • 200 g strawberry or raspberry jam
  • For icing: 200 g softened unsalted butter
  • 400 g icing sugar
  • 2 tbsp milk
  • pink food coloring

Instructions

  1. Preheat oven to 160C (fan) / 180C / 350F / Gas Mark 4. Line cupcake tin with black cases.
  2. In a mixing bowl, whisk together softened butter and caster sugar until fluffy using an electric mixer.
  3. Add eggs and vanilla extract; mix until fully combined.
  4. Gradually incorporate buttermilk, cocoa powder, baking soda, red food coloring, and self-raising flour until just mixed.
  5. Divide batter evenly among cupcake cases and bake for 20–25 minutes until a skewer comes out clean.
  6. Allow cupcakes to cool completely before coring the centers and filling with jam.
  7. To make the icing, beat softened butter until creamy; gradually add icing sugar, milk, and pink food coloring until smooth.
  8. Pipe icing onto cupcakes in a brain-like design.
