Ingredients
- 150 g softened unsalted butter
- 150 g caster sugar

- 200 g strawberry or raspberry jam
- For icing: 200 g softened unsalted butter
- 400 g icing sugar
- 2 tbsp milk

Instructions
- Preheat oven to 160C (fan) / 180C / 350F / Gas Mark 4. Line cupcake tin with black cases.
- In a mixing bowl, whisk together softened butter and caster sugar until fluffy using an electric mixer.
- Add eggs and vanilla extract; mix until fully combined.
- Gradually incorporate buttermilk, cocoa powder, baking soda, red food coloring, and self-raising flour until just mixed.
- Divide batter evenly among cupcake cases and bake for 20–25 minutes until a skewer comes out clean.
- Allow cupcakes to cool completely before coring the centers and filling with jam.
- To make the icing, beat softened butter until creamy; gradually add icing sugar, milk, and pink food coloring until smooth.
- Pipe icing onto cupcakes in a brain-like design.
