Instructions
- Preheat your oven to 350°F and grease two 8×8 pans. Line the bottom with parchment paper.
- In a mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix until blended.
- Add eggs one at a time, mixing well after each addition for a crackled top.
- Stir in vegetable oil and vanilla extract until fully combined.
- In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared pans and spread it out.
- Bake for about 30–40 minutes or until a toothpick inserted comes out with moist crumbs.
- Let the brownies cool for about 10 minutes before transferring them to a cooling rack to cool completely.
- Thaw your chosen ice cream until spreadable then layer it on one half of the brownie.
- Top with the second half of the brownie and freeze for at least six hours before slicing into squares.
