Instructions

  1. Preheat your oven to 350°F and grease two 8×8 pans. Line the bottom with parchment paper.
  2. In a mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix until blended.
  3. Add eggs one at a time, mixing well after each addition for a crackled top.
  4. Stir in vegetable oil and vanilla extract until fully combined.
  5. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared pans and spread it out.
  7. Bake for about 30–40 minutes or until a toothpick inserted comes out with moist crumbs.
  8. Let the brownies cool for about 10 minutes before transferring them to a cooling rack to cool completely.
  9. Thaw your chosen ice cream until spreadable then layer it on one half of the brownie.
  10. Top with the second half of the brownie and freeze for at least six hours before slicing into squares.
