  • 200ml heavy cream
  • 80g mascarpone cheese
  • 120ml coconut milk
  • 80g powdered sugar
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey cocoa spread

Instructions

  1. Begin by whipping heavy cream with mascarpone and powdered sugar until light and fluffy. Chill in the refrigerator.
  2. Soak vegan gelatin sheets in cold water until soft. Heat coconut milk, then dissolve gelatin in it.
  3. Fold the cooled coconut mixture into the whipped cream gently.
  4. Pour mousse into hemisphere molds, adding a teaspoon of gooey cocoa spread midway. Freeze for at least 6 hours.
  5. For the shortbread, mix all ingredients to form a dough, chill, roll out, and bake circles until golden.
  6. Once cooled, assemble by placing the mousse domes on top of the shortbreads and garnish with grated coconut.
