- 2 vegan gelatin sheets
- 200ml heavy cream
- 80g mascarpone cheese
- 120ml coconut milk
- 80g powdered sugar
- 120g powdered sugar
- 140g softened butter
- 160g all-purpose flour
- 25g unsweetened cocoa powder
- A pinch of sea salt
- 1/2 sachet baking powder
- 3 egg yolks
- Grated coconut
- Gooey cocoa spread
Instructions
- Begin by whipping heavy cream with mascarpone and powdered sugar until light and fluffy. Chill in the refrigerator.
- Soak vegan gelatin sheets in cold water until soft. Heat coconut milk, then dissolve gelatin in it.
- Fold the cooled coconut mixture into the whipped cream gently.
- Pour mousse into hemisphere molds, adding a teaspoon of gooey cocoa spread midway. Freeze for at least 6 hours.
- For the shortbread, mix all ingredients to form a dough, chill, roll out, and bake circles until golden.
- Once cooled, assemble by placing the mousse domes on top of the shortbreads and garnish with grated coconut.
