Ingredients
- 2.5 lbs beef chuck or stew meat
- 2 Tbsp coconut oil
- 1 large onion
- 4 garlic cloves
- 1 Tbsp fresh ginger
- 2 Tbsp red curry paste
- 1 can (14 oz) full-fat coconut milk
- 1 cup beef broth
- 2 Tbsp brown sugar or honey
Instructions
- Heat coconut oil in a large pot over medium heat. Sauté sliced onion until translucent.
- Add minced garlic and grated ginger; cook until fragrant.
- Incorporate red curry paste, ground cumin, turmeric, cinnamon, and optional chili flakes; mix well.
