- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cup granulated white sugar
- 1 cup unsalted butter, softened
- 1 egg
- 1 tbsp vanilla bean paste
- 1/2 cup granulated white sugar (for rolling the dough in)
- 1/2 cup granulated white sugar (for the brulee topping)
Instructions
- Prepare the pastry cream by heating milk and half of the sugar in a saucepan.
- Whisk egg yolks, remaining sugar, salt, cornstarch, and vanilla together separately.
- Combine and cook until thickened; let cool.
- Preheat the oven to 350°F (175°C). Beat softened butter and sugar until fluffy.
- Mix in the egg and vanilla.
- Combine flour, baking powder, and salt in another bowl; gradually mix into the wet ingredients.
- Scoop dough, create indentations for pastry cream filling, seal them, and roll into balls.
- Roll each ball in sugar and bake for about 9 minutes until golden but soft in the center.
- Caramelize the tops with additional sugar using a kitchen torch or broiler.
