  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup granulated white sugar
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup granulated white sugar (for rolling the dough in)
  • 1/2 cup granulated white sugar (for the brulee topping)

Instructions

  1. Prepare the pastry cream by heating milk and half of the sugar in a saucepan.
  2. Whisk egg yolks, remaining sugar, salt, cornstarch, and vanilla together separately.
  3. Combine and cook until thickened; let cool.
  4. Preheat the oven to 350°F (175°C). Beat softened butter and sugar until fluffy.
  5. Mix in the egg and vanilla.
  6. Combine flour, baking powder, and salt in another bowl; gradually mix into the wet ingredients.
  7. Scoop dough, create indentations for pastry cream filling, seal them, and roll into balls.
  8. Roll each ball in sugar and bake for about 9 minutes until golden but soft in the center.
  9. Caramelize the tops with additional sugar using a kitchen torch or broiler.
