Ingredients
- 2 light green zucchinis (about 380 grams)
- 120 grams Greek feta cheese, crumbled

- 7 tablespoons all-purpose flour

- Salt & pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchinis using a box grater and place them in a large bowl.
- Add crumbled feta, minced red onion, egg, flour, chopped mint leaves, salt, and pepper to the grated zucchini. Mix until combined.
- Heat olive oil in a non-stick frying pan over medium-high heat.

- Transfer cooked fritters to paper towels to drain excess oil before serving.
