Ingredients
- 1 english cucumber (sliced into thin rounds)
- 1 1/2 cup pre-shredded carrots
- 2 tsp garlic (finely minced)
- 1/4 cup finely chopped parsley (or use cilantro)
- 1/4 cup green onions (sliced)
- 2 tsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp apple cider vinegar
- 2 tsp low sodium soy sauce
- 1 tbsp sugar
- 1 tbsp honey
- 1 1/2 tbsp sesame seeds
- 1/16 tsp ginger
- 1/2–1 tsp crushed red peppers (optional)
- Salt and pepper (for taste)
Instructions
- Prepare the dressing by whisking together rice vinegar, apple cider vinegar, low sodium soy sauce, honey, sesame oil, sugar, sesame seeds, ginger, crushed red peppers (if using), salt, and pepper in a small bowl.
- In a large bowl, combine sliced cucumbers, pre-shredded carrots, minced garlic, chopped parsley or cilantro, and sliced green onions. Drizzle sesame oil over the top and toss gently to combine.
- Pour the prepared dressing over the vegetable mixture and mix well to coat everything evenly. Taste and adjust seasoning if necessary before serving.
