Ingredients
- 2 medium zucchini
- 2 medium yellow squash
- 1 cup grated mozzarella cheese
- 1/2 cup coarsely grated Parmesan cheese
- 4 T chopped fresh basil
- 2 T thinly sliced green onion
- 1/2 tsp. dried thyme
- 3/4 tsp. garlic powder
- Salt and fresh ground black pepper, to taste
Instructions
- Preheat your oven to 350°F (180°C) and prepare a baking dish with olive oil spray.
- Slice the zucchini and yellow squash into half-moons.
- In a mixing bowl, combine the sliced vegetables with chopped basil, green onions, thyme, garlic powder, half of each cheese type, salt, and pepper.
- Transfer the mixture to the prepared baking dish and bake uncovered for 25-30 minutes until tender.
- Add remaining cheese on top and bake for an additional 10-15 minutes until bubbly and golden.
