  • 1 1/2 pounds boneless skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 1 teaspoon grated garlic
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup white or brown rice
  • 1 1/2 cups water (2 cups if using brown rice)
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a glass measuring cup, whisk together tahini, olive oil, water, lemon juice, garlic, cumin, salt, and pepper until smooth.
  2. Place chicken in a freezer bag and pour in the marinade. Seal the bag while pressing out excess air; massage marinade into chicken. Marinate for at least 1 hour (up to 4 hours).
  3. Preheat grill to medium-high heat (400-425°F) and oil the grates.
  4. Grill marinated chicken for 4-6 minutes on one side; flip and cook until internal temperature reaches 165°F. Let rest for 5-10 minutes before serving.
  5. Follow package instructions to cook rice. Add in dill and lemon zest before bringing it to a boil. Once cooked, stir in lemon juice and let it steam covered for 10 minutes.
