Instructions

  3. In another bowl, mix melted coconut oil or butter with egg and almond extract; then stir in maple syrup and almond milk until smooth.
  4. Combine both mixtures gently and fold in diced peaches.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Drop rounded scoops onto the prepared baking sheet and flatten slightly.
  7. Bake for 9–12 minutes or until lightly golden around the edges.
