- 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
- 1 large egg, room temperature
- 1 tsp vanilla extract
- ½ cup (120mL) pure maple syrup
- 1 cup (90g) freshly grated zucchini, patted dry
Instructions
- In a medium bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix coconut oil (or butter), egg, and vanilla until combined. Stir in maple syrup.
- Gradually add the dry ingredients to the wet mixture and stir until just combined. Gently fold in grated zucchini.
- Chill the dough for 30 minutes.
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Drop rounded scoops of dough onto the prepared sheet; flatten slightly. Bake for 11-14 minutes until golden around the edges.
