- 150g firm tofu
- 100g soaked cashews
- 120ml coconut milk (canned)
- 85g maple syrup (or other liquid sweetener)
- 3–4 tbsp lime juice (or lemon juice)
- 25g cornstarch
- 1 tsp vanilla extract

- 20g nut butter (of choice)

Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine the flour, ground almonds, flaxseed eggs, vegan butter, sugar, and salt to form the crust mixture. Press it into a greased springform pan.
- For the filling, cook diced apples with lemon juice, water, and sugar until tender. Stir in spices and cornstarch.
- Blend tofu and soaked cashews until smooth, then mix in coconut milk and maple syrup.
- Layer the apple filling over the crust, followed by the cheesecake mixture.
- Bake for about 45 minutes until firm. Let cool before serving.
