Ingredients
- 1 kohlrabi
- 750 g potatoes
- 1 bunch parsley
- 1 onion
- 1 tsp oil
- 400 ml vegetable broth
- 200 g cream cheese (0.2% fat)
- 2 tsp cornstarch
- 6 chicken sausages (or turkey)
Instructions
- Peel and dice the kohlrabi and potatoes. Finely chop the parsley and onion.
- Heat oil in a large pot, add the chopped onion, and sauté until translucent.
- Add the diced potatoes and kohlrabi; briefly sauté before pouring in the vegetable broth. Cover and simmer for about 15 minutes until tender.
- Stir in cream cheese and season with salt and pepper. Mix cornstarch with water, then add to thicken.
- Slice sausages and stir them in along with chopped parsley.
- Serve hot in bowls.
