Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice

  • 1/4 teaspoon salt

Keywords: Use fresh lemons for the best flavor; bottled juice can be used in a pinch but lacks brightness. Chill bars thoroughly before cutting for cleaner edges. Customize by adding berries or nuts to the filling or topping.
