- 1 cup granulated sugar (divided)
- 2 tablespoons cornstarch (or sifted cake flour)

- 3/4 cup full-fat yogurt
Instructions
- Preheat your oven to 325°F (160°C) and prepare an 8-inch springform pan with parchment paper.
- In a clean bowl, whip egg whites until frothy, gradually adding 1/3 cup sugar until stiff peaks form.
- In another bowl, whisk together egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch, and salt until smooth.
- Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it. Then fold in the remaining egg whites in two additions without overmixing.
- Pour the batter into the prepared pan, place it in a larger baking tray with hot water (bain-marie), and bake for 50–60 minutes until golden brown.
- Let cool in the oven with the door slightly ajar for 15 minutes before removing.
