  • 2 tablespoons cornstarch (or sifted cake flour)

  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare an 8-inch springform pan with parchment paper.
  2. In a clean bowl, whip egg whites until frothy, gradually adding 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch, and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it. Then fold in the remaining egg whites in two additions without overmixing.
  5. Pour the batter into the prepared pan, place it in a larger baking tray with hot water (bain-marie), and bake for 50–60 minutes until golden brown.
  6. Let cool in the oven with the door slightly ajar for 15 minutes before removing.
