Ingredients
- 375 g cooking apples (e.g., Bramleys)
- 375 g eating apples (e.g., russets)
- 90 g butter
- 60 g caster sugar
- Grated rind of 1 lemon
- 45 g plain flour
- 500 ml whole milk
- 3 large egg yolks
- 1½ teaspoons vanilla extract
- 60 g demerara sugar
- ½ teaspoon ground cinnamon
Instructions
- Preheat your oven to 180°C (350°F).
- Peel, core, and evenly slice the cooking and eating apples.
- In a saucepan, melt 45 g of butter over medium heat, then add apples and 60 g sugar with lemon rind. Cook for about 5–7 minutes until softened.
- In another saucepan, melt the remaining butter and whisk in flour until smooth. Gradually add milk while stirring until thickened. Remove from heat and stir in egg yolks and vanilla.
- Spread cooked apples into a greased baking dish, pour custard over the top, then mix demerara sugar with cinnamon and sprinkle over the custard.
- Bake for approximately 20 minutes until golden brown on top.
