Ingredients
- 160 g all-purpose flour
- 60 g powdered sugar
- 115 g unsalted butter, cold and cubed
- 1 egg yolk
- 1 medium apple, peeled and diced
- 80 g mixed berries (fresh or frozen)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- 1/2 tsp cinnamon
Instructions
- In a mixing bowl, combine the flour and powdered sugar. Add cold butter cubes and mix until crumbly. Stir in the egg yolk until combined. If necessary, add cold water gradually until the dough comes together. Wrap in plastic wrap and refrigerate for 15 minutes.
- Meanwhile, mix diced apple, mixed berries, sugar, lemon juice, cinnamon, and cornstarch in another bowl to allow flavors to meld.
- Preheat oven to 180°C (350°F).
- Roll out chilled dough on a floured surface to about 0.5 cm thick. Cut out rounds to fit your pie dish or muffin tin and place them into the greased vessel. Fill with berry and apple mixture.
- Bake for 25–30 minutes or until golden brown. Let cool slightly before serving.
