Ingredients
- 2½ cups crushed pretzels
- ¾ cup granulated sugar
- ¾ cup melted butter
- 12 ounces cream cheese
- 2 teaspoons vanilla extract
- 12 ounces Cool Whip
- 6 ounces peach vegan gelatin
- 2 cups boiling water
- 2 cups ice water
- 4 cups fresh peaches, peeled and diced
Instructions
- Preheat the oven to 350°F. Lightly butter a 9×13 inch baking pan.
- In a medium bowl, combine crushed pretzels, ¾ cup sugar, and melted butter. Press into the bottom of the prepared pan and bake for 10 minutes. Allow to cool completely.
- In a large bowl, beat cream cheese with remaining sugar and vanilla until smooth. Fold in Cool Whip until well combined. Spread over cooled pretzel crust.
- Dissolve peach gelatin in boiling water. Stir in ice water and gently fold in diced peaches. Refrigerate for about 15 minutes until slightly thickened.
- Pour the jello mixture over the cream cheese layer evenly. Cover with plastic wrap and refrigerate for at least two hours until set.
