  • 2½ cups crushed pretzels
  • ¾ cup granulated sugar
  • ¾ cup melted butter
  • 12 ounces cream cheese
  • 2 teaspoons vanilla extract
  • 12 ounces Cool Whip
  • 6 ounces peach vegan gelatin
  • 2 cups boiling water
  • 2 cups ice water
  • 4 cups fresh peaches, peeled and diced

Instructions

  1. Preheat the oven to 350°F. Lightly butter a 9×13 inch baking pan.
  2. In a medium bowl, combine crushed pretzels, ¾ cup sugar, and melted butter. Press into the bottom of the prepared pan and bake for 10 minutes. Allow to cool completely.
  3. In a large bowl, beat cream cheese with remaining sugar and vanilla until smooth. Fold in Cool Whip until well combined. Spread over cooled pretzel crust.
  4. Dissolve peach gelatin in boiling water. Stir in ice water and gently fold in diced peaches. Refrigerate for about 15 minutes until slightly thickened.
  5. Pour the jello mixture over the cream cheese layer evenly. Cover with plastic wrap and refrigerate for at least two hours until set.
