Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set aside.
  3. In another bowl, beat unsalted butter and sugars until light and fluffy. Add pumpkin puree, egg, and vanilla; mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined; the dough will be sticky.
