Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out the seeds, or set aside ramekins.
  3. In a saucepan over medium heat, combine heavy cream and granulated sugar until sugar dissolves (do not boil).
  4. Whisk egg yolks, vanilla extract, pumpkin puree, cinnamon, ginger, and salt in a mixing bowl until smooth.
  5. Gradually pour the warm cream mixture into the egg mixture while whisking continuously to avoid curdling.
  6. Fill prepared mini pumpkins or ramekins with custard and place them in a baking dish filled with hot water halfway up their sides.
  7. Bake for about 30 minutes until just set but slightly jiggly.
