  • 2 pounds yellow squash (sliced ¼ inch thick)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)

Instructions

  1. In a large pan over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté for 7-8 minutes until soft.
  2. Stir in the sliced yellow squash and cook for an additional 10-12 minutes until tender, stirring frequently.
  3. Drain excess moisture from the cooked squash by placing it in a colander lined with a towel. Allow it to drain for at least 5 minutes.
  4. In a mixing bowl, combine the drained squash mixture with garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and 1/4 cup of Parmesan cheese. Mix well.
  5. Melt the remaining butter and mix it with the crushed crackers and remaining Parmesan cheese.
  6. Spread the squash mixture evenly into a greased baking dish (approximately 8×8 inches). Top with the cracker mixture.
  7. Bake in a preheated oven at 350°F for about 25 minutes or until golden brown on top.
