- 1/2 cup unsalted butter (nearly at room temperature)
- 1/4 cup salted butter (nearly at room temperature)
- 2 1/2 – 2 3/4 cups powdered sugar
- 1/4 tsp vanilla extract
- 4 drops red food coloring (optional)
Instructions
- Preheat oven to 350°F.
- Sift together the dry ingredients: flour, baking powder, baking soda, and salt.
- Cream softened butter and sugar until fluffy; add egg and egg whites one at a time.
- Combine wet ingredients: buttermilk, strawberry puree, vanilla.
- Alternate adding dry and wet mixtures until just combined; fold in diced strawberries.
- Fill muffin cups three-fourths full and bake for 20-23 minutes.
- Cool completely before frosting with strawberry buttercream made from whipped butter, powdered sugar, and reduced strawberry puree.
