  • 1/2 cup + 2 Tbsp strawberry puree (for frosting)
  • 1/2 cup unsalted butter (nearly at room temperature)
  • 1/4 cup salted butter (nearly at room temperature)
  • 2 1/22 3/4 cups powdered sugar
  • 1/4 tsp vanilla extract
  • 4 drops red food coloring (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Sift together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. Cream softened butter and sugar until fluffy; add egg and egg whites one at a time.
  4. Combine wet ingredients: buttermilk, strawberry puree, vanilla.
  5. Alternate adding dry and wet mixtures until just combined; fold in diced strawberries.
  6. Fill muffin cups three-fourths full and bake for 20-23 minutes.
  7. Cool completely before frosting with strawberry buttercream made from whipped butter, powdered sugar, and reduced strawberry puree.
