Ingredients
- 8 ears fresh sweet yellow corn (kernels cut from cob)
- 3 Tbsp butter
- 5 slices turkey bacon (cut into pieces)
- 1 medium yellow onion (chopped)
- 1/4 cup all-purpose flour
- 1 clove garlic (minced)
- 5 cups low-sodium chicken broth
- 1 lb Yukon Gold potatoes (cut into pieces)
- 1/2 tsp dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper (to taste)
- 1 cup half-and-half
- 1 Tbsp honey
- Chopped fresh chives (for garnish)
Instructions
- In a large pot over medium heat, melt butter. Add onion and turkey bacon; sauté until onion softens and begins to brown, about 8–10 minutes.
- Stir in flour and garlic; cook for an additional 1.5 minutes while whisking. Gradually pour in chicken broth until fully combined.
- Bring to a boil while stirring; add corn kernels, potatoes, thyme, bay leaf, salt, and pepper.
- Reduce heat to medium-low and simmer for about 20 minutes until potatoes are tender.
- Remove bay leaf and blend about 2.5 cups of the chowder until smooth; return the blended mixture to the pot.
- Stir in half-and-half and honey; serve topped with chives.
