  • 50 ml vegetable oil

  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 432 g tin pineapple pieces (drained)
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • grated ginger
  • grated garlic

Instructions

  1. Season chicken with salt and pepper, then coat with cornstarch.
  2. Heat oil in a frying pan over medium-high heat. Fry chicken until golden brown; set aside.
  3. In the same pan, sauté onion and peppers until slightly soft.
  4. Mix sauce ingredients in a bowl and pour over vegetables in the pan.
  5. Return chicken to the pan; stir to coat evenly and cook for another 5 minutes.
  6. Gently fold in pineapple before serving hot over rice or noodles.
