- 1 medium sweet potato
- 1 tsp olive oil
- Salt & pepper to taste
- 150g (5 oz) lean ground beef
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 avocado, sliced
- 1 cup cottage cheese
- 1/2 tsp honey (for drizzling)
Instructions
- Preheat oven to 200C (400F). Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden brown.
- In a skillet over medium heat, cook lean ground beef until browned. Season with smoked paprika, garlic powder, salt, and pepper.
- In a mixing bowl, layer roasted sweet potatoes at the bottom. Add cooked ground beef on top followed by slices of avocado and spoonfuls of cottage cheese.
- Drizzle honey over the avocado and cottage cheese. Sprinkle black pepper to taste.
