- 1 lb boneless, skinless chicken breasts
- 2 large zucchini
- 2 medium bell peppers
- 1 medium onion
- 3 garlic cloves
- 1 cup corn (fresh or frozen)
- 14 oz can low sodium black beans
- 14 oz can low sodium diced tomatoes
- 1 cup Tex Mex or Colby Jack cheese
- 1 tbsp oil (for frying)
- 1 tsp store bought or homemade taco seasoning
- 1 tbsp cumin (divided)
- 1 tsp salt
- Ground black pepper (to taste)
- 1/2 cup green onions (chopped)
- 1/2 cup cilantro (chopped)
Instructions
- Preheat a deep skillet over low to medium heat and add oil.
- Sauté onion, garlic, and bell pepper for about 3 minutes until softened.
- Push veggies aside and add chicken; season with cumin, salt, and pepper. Cook for about 5 minutes until browned.
- Stir in corn, black beans, diced tomatoes, zucchini, taco seasoning, and remaining cumin; cover and cook on low-medium heat for about 10 minutes.
- Sprinkle cheese on top; cover again until melted. Garnish with green onions and cilantro before serving.
