Ingredients

Scale
  • 6 cups sweet cherries (pitted and halved)
  • ⅔ cup granulated sugar
  • ⅓ cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ teaspoon almond extract (optional)
  • 1 tablespoon unsalted butter (for dotting on the filling)
  • 2 ¼ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup cold unsalted butter (cut into cubes)
  • 7 tablespoons ice-cold water

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt in a bowl. Incorporate cold butter until crumbly. Gradually add ice-cold water to form dough. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. For the cherry filling, combine pitted cherries, sugar, cornstarch, lemon juice, vanilla extract, salt, and almond extract if using in a bowl. Mix well and set aside.
  3. Preheat your oven to 425°F (220°C). Roll out half of the chilled dough and place it in a pie dish. Pour in the cherry filling and dot with butter.
  4. Roll out the remaining dough for the top crust, seal edges, and cut slits for steam vents. Brush with an egg wash if desired.
  5. Bake for about 45–55 minutes until golden brown. Allow cooling before serving.
