  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 1/2 tsp dried marjoram
  • 1 pinch of nutmeg
  • Salt and pepper (to taste)
  • 4 cups vegetable broth (or water)
  • 2 whole bay leaves (optional)
  • 1/3 cup dairy-free cream
  • Fresh parsley (to garnish)
  • Sliced vegan sausage (optional)

Instructions

  1. In a large pot, heat oil over medium heat. Add diced onion and sauté until translucent (about 3 minutes). Stir in minced garlic, celery, diced carrots, chopped potatoes, and spices; sauté for an additional minute.
  2. Pour in vegetable broth (and bay leaves if desired) and bring to a boil. Reduce heat to simmer for about 20 minutes until vegetables are tender.
  3. Carefully transfer half of the soup to another pot and blend until smooth using an immersion blender. Return blended soup to the original pot.
  4. Stir in dairy-free cream to achieve a creamy texture. Simmer for a few more minutes while adjusting seasonings as needed.
  5. Serve hot with fresh parsley garnish and optional sliced vegan sausage.
