- 7 to 8 cups seedless watermelon (cut into ¾ inch cubes)
- 1 ½ cups fresh blueberries
- 1 cup crumbled feta cheese
- Fresh mint and basil leaves (thinly sliced)
- Juice of 1 ½ limes
- 1 tablespoon extra virgin olive oil
- 1 to 2 tablespoons honey
- A pinch of salt
Instructions
- In a mason jar, combine lime juice, olive oil, honey, and salt. Shake well to create the dressing.
- In a large bowl, add the cubed watermelon, fresh blueberries, sliced mint and basil, and crumbled feta. Drizzle with the dressing.
- Gently toss until all ingredients are coated.
- Top with remaining feta and garnish with additional mint and basil before serving.
