- 1½ lb zucchini (thinly sliced)
- ¼ cup butter (divided)
- 2 cups diced sweet onion
- 2 garlic cloves (minced)
- 3 cups corn kernels
- 1½ cups shredded white cheddar cheese
- ½ cup sour cream
- ½ cup mayonnaise
- 2 eggs (lightly beaten)
- Salt and pepper to taste
- 1½ cups fresh breadcrumbs (divided)
- 1 cup grated parmesan cheese (divided)
Instructions
- Preheat the oven to 350ºF and lightly spray a 9x13x2-inch baking pan.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add zucchini, yellow squash, and onion; sauté for about 10 minutes until tender. Stir in garlic and cook for an additional 2 minutes.
- In a mixing bowl, combine the sautéed mixture with corn kernels, cheddar cheese, sour cream, mayonnaise, eggs, salt, pepper, breadcrumbs, and parmesan.
- Spread the mixture into the prepared baking pan.
- In a small bowl, mix the remaining melted butter with breadcrumbs and parmesan; sprinkle over the casserole.
